- 1 ½ cups water
- 2 handfuls of thyme
- A bit of ginger
- ¾ cup honey
Bring the water to a boil and add the ginger and thyme, then simmer until the ginger is soft. Take the pot off the heat and add the honey when cold, then pour the strained syrup in a dark bottle and keep it in a cool spot.
